Bread used to be sacred. A slow partnership between soil, ancient grains, ambient wild yeasts, and wood-fired heat. We started Maison Levain to unmake fifty years of hyper-processed supermarket loaves and restore real bread to the center of the table.
Carried across continents in an earthenware crock from an alpine farm in Haute-Savoie, Auguste has been continuously fed unbleached rye flour twice a day since 1922. Every single loaf we bake shares this living heritage.
Why true sourdough takes ninety-six hours from milling to slicing.
We mill non-GMO, organic heirloom grains using natural granite stones running slowly to prevent heat from stripping delicate grain oils.
Flour and spring water rest for two hours before adding Auguste. Dough is gently stretched and folded by hand every 30 minutes instead of mechanical churning.
Shaped loaves rest in natural spruce-wood bannetons at 38°F. The cold retards yeast activity while allowing friendly bacteria to break down fructans and phytic acid.
Loaves are hand-scored with a razor blade and slide directly onto 485°F stone deck hearths with live steam injection, creating our signature blistered mahogany crust.
Most commercial flour is a commodity blend sourced from thousands of unknown industrial fields, bleached with chlorine gas and stripped of its wheat germ.
