Every loaf is naturally leavened by our century-old sourdough culture, stone-milled in small batches, and blistered in our stone deck oven each morning before sunrise.
We bake continuously throughout the day so your bread and pastries are warm at pick-up.

Industrial bread was designed for shelf-life, sacrificing flavor, nutrition, and digestibility. We returned to the origin: organic grains grown by regional family farms, slow fermentation that breaks down gluten proteins, and high heat that caramelizes natural sugars into an intensely aromatic crust.
Read Our Story & Grain SourcingWe grind heirloom grains on an Austrian stone mill directly in our bakery to preserve delicate wheat germ oils and vitamins.
Long, cold fermentation allows wild lactobacilli to naturally unlock bioavailable nutrients and develop deep complexity.
No preservatives, dough conditioners, or artificial enzymes. Only four honest ingredients: flour, water, leaven, salt.
The acid enzymatic breakdown makes our sourdough gentle on sensitive stomachs compared to standard supermarket bread.
